Default Hot Dog Chili

Ingredients:
3 lbs Grd beef
1 cn Black Beans (drained)
3 onions (minced fine)
1 whole bulb garlic (minced fine)
3 red bell peppers (minced fine)
3 (22oz)cns tomatoe sauce
4 T chili powder
1 T cumin powder
4 (6oz) cns tomatoe paste
1.5 T hot choc mix
1 T black pepper
1 T cayenne (more if you like it hot) my kids won't eat it spicy hot.

optional stuff;

more Cayenne pepper
more beans
red chili pepper flakes

Cooking Instructions:
Render down the GB. Set aside meat(Do not brown it!)drain pan,

next lightly sautee' the veggies/garlic in 2T Canola oil till soft, then

In a pot dump in all ingredients, stir well, turn on low to low/med heat uncovered. Stir every 10 min or so until it reduces the liquid down to your desired consistancy. (It should be in the 4 hr time range.) I know,, but it takes time to make it good. A short cut you can try is adding in some Mesa flour up front but it gives it a coarse texture and I don't like that. That's why I reduce mine, besides it lets the flavors age better.

Serving Suggestions:
Top your fav dog, brat, Ital sausage, scrambled eggs, taco salad, grilled cheese, or onion sandwich with it.

Additional Comments:
Once reduced you can cool it out completely then refrige or freeze it. DO NOT put it up warm. The beans will sour. To re-heat just add in a small (3 T) amount of water and still well, then Microwave. This recipe is best made a day ahead.
